If you can get what you need off any one of the copies, then trust me
- it exists. LOL

Yes, 3-2-1 is best. Most people have one copy on the server/machine,
another on tape offsite. Occasionally, you have what I have - *some*
of the data is also on a secondary backup disk, as well as on the
offsite backup tape. But certainly not all the terrabytes we backup
every day. Only the most important databases, and the main user home
folders and departmental shared folders , and email, are done that
way.
