OK. Thank you JP and Keith! Very valuable stuff, saved for future
reference.
I do have the machine now up and running on non-LVM partitions (these
words will flow through it), so I should be able to create backups with
ordinary tools from here on out.
I am going to repeat the process with a second machine next week.
