If you are interested in machine learning in theory Connectionism and the
Mind is an excellent book.  It is a good introduction to connectionest
theory which I believe is where the future of AI lies.  It is by Bechtel and
Abrahamsen.  I read it for a class I took on Artificial Intelligence.
