I know almost every ruby conference gets uploaded to confreaks.com.  I think they provide a professional-paid-for service though.

I imagine we could have multiple solution paths depending on who shows up and what equipment is available at which meeting.   (ie if a hobbyist has a professional camera, why not use it, but have a cellphone as backup)  i have a logitech webcam which is really part of book digitizing apparatus, but its very Linux-friendly and writes directly to Linux laptop hard drive.  I don't know if it will provide better quality recordings than a newer cellphone.

I'm still discovering the awesomeness of the new-used Sony Xperia Z, that I got off of swappa.  I wonder if others in our group are knowledgeable about or interested in Android-rooting/modding.  It might be a good future meeting topic ;-)

I guess you could do all this, but you still have to host the video
and all that.

What is the advantage over just hitting the record button a cell
phone, and then hitting the upload-to-youtube button when you're done
(and back on WiFi)?

If you want to use multiple cameras and NLE/etc, then you're adding a
lot of labor to this which means it probably won't happen.
