I think you need to consider your threat model in general.  If you're
worried about the NSA following you around everywhere you should just
stop worrying - they are going to follow you around everywhere no
matter how much tin foil you apply to your car...  If your threat
model is such that you're worried about somebody at Ford but not
worried about somebody at Verizon, well, I guess this could work.

Now please excuse me while I go install the software update my car
just downloaded...

The concern would be the privacy/security policy of the car manufacturer and any third party supplying software embedded in the car.

Though I don't use the onboard GPS on the 2019 vehicle we lease, I am very aware that it actively displays the name of the street I am on in the instrument panel.

Does that location information as well as speed, braking, acceleration to the manufacturer as well? Probably.

How is it used in terms of warranty or lease agreements.
Do they share that with insurance companies.
Do they share it with other third parties.
How is that information stored and protected.

Yes, some of those questions are probably answered in EULAs we signed without reading at the dealership.
