Nope, that would work fine.  The only issue is that they're new to
linux and doing an email walkthrough for that could be tricky.  Also,
there is more than one mountpoint at this point, which is just a minor
detail but needs to be handled.  Also, much of it is on LVM so I'd
just do pvmoves for those partitions.  It is really just /boot and the
bootloader that need special handling.

Totally agree.  I think a good number of Linux people know how to do this but even than unless you do it a lot its easy to miss a step.  If you're doing it remotely its really never not nerve racking.  For someone new, this is going to be tricky and I wouldn't do it over email either.  You just don't know what might jam someone up.

For the record, the multiple mount point stuff (like with Ubuntu snaps) has not been a thing either.  I've been doing in place upgrades of Ubuntu 16.04 LTS to 18.04 LTS, 20.04 LTS or 20.10 and it all just works because those are system resources and you as the user to don't have to touch /etc/fstab.  The only thing that has been a thing for me is when you are changing boot types (i.e. msdos <-> efi booting) or when a drive id changes during the move of a file system to a new drive (i.e. replacing a drive or imaging to new hardware).

I suppose there are people who mount /var, /usr and other things are separate LV's but I would be surprised if the typical Linux user is doing that.  I haven't used a distro that does that by default in a very long time.  I also haven't installed from scratch without choose a custom disk layout in a very long time so maybe I just haven't seen it.
