The issue here is that for whatever reason Ubuntu Server only created
a 200GB root partition, and left the rest of the space as free space
in the volume group.  So a new logical volume was created for
/var/lib/goetherium.  Extending root would have been another option.

My guess is that Ubuntu Server isn't designed to be as handholding as
the desktop version.
