I've been doing that of late in my k8s cluster, in part because Ceph needs a lot of RAM, and memory is one of the most expensive components of a new computer these days. In used computers, it is practically free. Getting some old corporate desktop with 32GB of RAM for $125 or whatever is very easy. Or if I need more PCIe I can usually get an older workstation for $200 (main issue there is higher power draw, but they have tons of lanes and RAM channels - just look out for whether the motherboard supports bifurcation).
