okay, so i think i've settled on a system:

Case: Lian-Li PC-60 Aluminum
Power Supply: PS 400W - SPI Sparkle FSP400-60GN
Motherboard: Asus K8N-E Deluxe 
Processor: AMD Athlon 64 3400+
Heatsink Fan: Thermaltake A1772
Thermal Grease: Shin-Etsu G675 Thermal Grease
Memory: 2x DDR (400) 3200 - 512 MB OCZ (OCZ400512P)

the whole deal comes to about $750 including assembly fees and warranty,
which is right in the range i was looking to spend (in the low end,
actually), and much less than i was expecting a system like this to cost.

The motherboard is a nice one, with an nforce based chipset (i didn't
mention, but via chipsets were out of the question), dual channel ram (as
suggested -- thanks), and lots and lots of on-board goodies: SATA RAID,
8ch audio with S/PDIF out, gb lan, firewire, usb 2...  the deal was so
sweet, that i decided to pony up for one of those really, really nice
lian-li cases too :)
