for ripping/encoding/tagging, i'm a big fan of abcde.  the way i have
it set up, i put in a cd, type 'abcde', hit enter a few times, and
the music is brought into my collection.  i personally prefer ogg vorbis,
but abcde will let you do flac or mp3 too if you so choose.

for playing, i've always used xmms or ogg123/mpg123.
