My Samsung i500 (Palm OS 4.1) used to easily do this out of the box.  I 
found out accidentally when I pressed the voice memo button while on a 
call.  I have not tried doing it with my BB Curve which also has a voice 
memo app.

It recorded both parties to the call, and played the periodic recording 
'beep'.
