Allegedly I lose some specific bit of cable functionality but I
have never noticed anything missing. (Admittedly not a big TV
watcher.)

Supposedly, the cable boxes need an IP address and internet access to do part of their jobs.    IIRC from my last conversation with a FIOS tech, it was used for the room-to-room DVR and a few other features that would take advantage of streaming over a local IP network.
