Speaking of this, something clicked, so I went and took a look at the
manual, on mutt.org.

There is a configuration variable, sendmail (see
<http://www.mutt.org/doc/manual/manual-6.html#sendmail>), which tells
mutt how to send the mail.  One could whip up a small program (it would
probably be a bit much for the shell; you'd probably want to use Perl,
Python, or similar) that would suitably mangle the outgoing message
before handing it off to the real /usr/sbin/sendmail.  (Kind of like a
formail in reverse...)
